Black Bean Veggie Burgers

​This recipe will rock your world!!!  That's all you need to know.  Make it.

Ingredients:
  • 1 medium onion, finely chopped
  • 2 stalks celery, chopped
  • 2 cloves garlic, minced
  • 1/2 medium red bell pepper, diced
  • 1/2 jalapeño pepper, seeds removed, finely chopped
  • 1 Tbsp. Italian seasons or (2 tsp. oregano + 2 tsp. thyme)
  • 1 Tbsp. cumin
  • 1/2 tsp. sea salt
  • black pepper  (I use a few sprinkles, use more if you like.
  • 2 Tbsp. extra virgin olive oil
  • 2 Cups cooked black beans, slightly mashed
  • 1 Cup cooked brown rice (sticky, not dry)
  • 1/4 cup sunflower seeds, chopped and toasted
  • 1/4 cup quick-cooking rolled oats
  • 2 Tbsp. tamari
  • kale
  • spinach
  • avocado, sliced
  • tomato, sliced
  • fresh cilantro, finely chopped

Directions: make 8,  1/2Cup patties.  2 patties per serving
  1. Sauté the onion, celery, garlic, peppers, and spices in the oil until tender.
  2. Pour mix into a large mixing bowl with the rest of the ingredients up to tamari.
  3. Mix well.  The mixture should hold together to form patties.
  4. Preheat the oven to 350*F.  Form the mixture into patties, and place on an oiled baking sheet. 
  5. Bake about 25-30 minutes, turning after 15 minutes.
  6. Serve over a bed of spinach and kale with avocado and tomato slices and chopped cilantro.
