Black Bean Veggie Burgers

Ingredients:
Directions: make 8, 1/2Cup patties. 2 patties per serving
- 1 medium onion, finely chopped
- 2 stalks celery, chopped
- 2 cloves garlic, minced
- 1/2 medium red bell pepper, diced
- 1/2 jalapeño pepper, seeds removed, finely chopped
- 1 Tbsp. Italian seasons or (2 tsp. oregano + 2 tsp. thyme)
- 1 Tbsp. cumin
- 1/2 tsp. sea salt
- black pepper (I use a few sprinkles, use more if you like.
- 2 Tbsp. extra virgin olive oil
- 2 Cups cooked black beans, slightly mashed
- 1 Cup cooked brown rice (sticky, not dry)
- 1/4 cup sunflower seeds, chopped and toasted
- 1/4 cup quick-cooking rolled oats
- 2 Tbsp. tamari
- kale
- spinach
- avocado, sliced
- tomato, sliced
- fresh cilantro, finely chopped
Directions: make 8, 1/2Cup patties. 2 patties per serving
- Sauté the onion, celery, garlic, peppers, and spices in the oil until tender.
- Pour mix into a large mixing bowl with the rest of the ingredients up to tamari.
- Mix well. The mixture should hold together to form patties.
- Preheat the oven to 350*F. Form the mixture into patties, and place on an oiled baking sheet.
- Bake about 25-30 minutes, turning after 15 minutes.
- Serve over a bed of spinach and kale with avocado and tomato slices and chopped cilantro.
