Kale, Chicken Sausage, and Pasta Bowl
This was a meal inspired by a free sample at Trader Joe's. I loved it! So simple, nutritious, and delicious! I LOVE all the Kale!
Ingredients:
Directions: Makes 4 servings

- 2 cups Orecchiette Pasta (dry)
- 1 10oz. bag of Kale
- 4 Chicken sausage links (I like Trader Joe's )
- 1/2 cup Sun dried tomatoes
- 1/4 cup shredded Parmesan cheese
Directions: Makes 4 servings
- Pasta: Cook pasta according to bag instructions. Drain and put in large bowl. Set aside.
- Kale: Over medium heat place ¼ cup of water or stock in a 12” skillet, add kale, stir and cover for about 1 min. Stir again to make sure all leaves are wilted and remove from heat.
- Chicken sausage: slice sausages and grill or pan fry for 7-9 minutes. Add to pasta bowl.
- Add cooked pasta, kale, chicken sausage, sun dried tomatoes and parmesan cheese together in large bowl. Toss well. Add salt and pepper to taste.
- Serve into 4 bowls and enjoy.
