Pumpkin Protein Pancakes

If you know me, you know I love a "hunk of pumpkin!"  These are delicious!

Ingredients:
  • 1/2 C. quick oats oatmeal
  • 1/2 C. egg whites
  • 1/4 C. pumpkin puree
  • 1 serving (2 scoops) 100% Whey Protein Powder Vanilla (Isagenix in our house)
  • 1 t. vanilla
  • 1/2 t. cinnamon
  • 1/4 t. all spice
  • 1/4 t. salt
  • dash of nutmeg

Directions:
Makes 8 pancakes
  1. Combine all ingredients in a food processor until smooth.
  2. Heat pan (or griddle) over medium heat; coat with non-stick cooking spray.
  3. Pour batter onto the pan/griddle.
  4. Cook each pancake for1-2 minutes and then flip. Cook on the other side for about 1 minute.
  5. Serve with your favorite toppings. I love fresh strawberries. My husband opts for real maple syrup!
