Pumpkin Protein Pancakes
If you know me, you know I love a "hunk of pumpkin!" These are delicious!

- 1/2 C. quick oats oatmeal
- 1/2 C. egg whites
- 1/4 C. pumpkin puree
- 1 serving (2 scoops) 100% Whey Protein Powder Vanilla (Isagenix in our house)
- 1 t. vanilla
- 1/2 t. cinnamon
- 1/4 t. all spice
- 1/4 t. salt
- dash of nutmeg
Directions:
Makes 8 pancakes
- Combine all ingredients in a food processor until smooth.
- Heat pan (or griddle) over medium heat; coat with non-stick cooking spray.
- Pour batter onto the pan/griddle.
- Cook each pancake for1-2 minutes and then flip. Cook on the other side for about 1 minute.
- Serve with your favorite toppings. I love fresh strawberries. My husband opts for real maple syrup!
