Strawberry Chicken Salad

​Run, don't walk to the grocery store or farmers market!  Buy these ingredients and make this salad with my Dooley Noted (TM) signature dressing.  It's to die for!  However, it's so healthy you'll want to live with all the energy this salad provides!!!  Trust me! It's that good!

Ingredients:
  • 2 cups mixed greens or baby spinach
  • 3 oz. grilled chicken breast , diced (use rotisserie chicken for time saving)
  • 1/4 c. fresh strawberries, sliced
  • 1/4 avocado, diced
  • 1 T. walnuts, chopped
  • 2 T. Dooley Noted Fresh Strawberry Vinaigrette
  • Any fresh herbs from your garden.  I love fresh Basil!

Directions: Combine/Toss all ingredients in a fun, festive bowl and enjoy!!!

Nutrition Facts: per serving of salad with 2 T. dressing:
Calories: 340      Fat: 20g           Sat. fat: 3g    Trans fat: 0g    Cholesterol. 68mg   
Protein: 30g       Carb. 18g         Fiber 7g        Sugar 8g          Sodium 493mg.   

 Fresh Strawberry Vinaigrette (makes 1 cup)
  • 1/4 C. extra virgin olive oil
  • 1/4 C. white balsamic raspberry blush vinegar
  • 1/4 C. fresh strawberries
  • 1/4 C. water
  • 1/2 t. sea salt
  • 1/2. T. raw honey
  • 1 t. dried thyme (or use fresh herbs from your garden.  I love fresh Basil!)

Directions:
1. Place all ingredients into your Vitamix Pro500 container in the order listed and secure lid.
2. Select "Smothies" program.
3. Press Start.
4. Allow machine to complete programmed cycle.
*** If you don't have a Vitamix (I'm sorry), it's ok.  Just blend  in your blender at a high speed for roughly 30 seconds until the dressing is emulsified.
Refrigerate in an airtight container for up to 2 weeks.
Yields: 1 cup= 8 x 2 Tablespoon servings of dressing
