Tidy Mike's (aka Healthy Sloppy Joe's)
When I started this dish, it was to be a healthy "Sloppy Joe" for my Mike. However, it evolved into an awesome turkey taco salad for my "Tidy Mike!" This meal has Mike's seal of approval. He even asked for it again. I must be doing something right! :)

- 1 lb. lean turkey meat
- 1 C. red onion, chopped
- 1 C. bell pepper (any color), chopped
- 1 clove garlic, minced
- 1 packet taco seasoning
- 8 C. mixed greens
- 1 avocado, sliced
- fat free salsa
- Ezekiel Wraps (optional)
Directions: Makes 4 Servings (it's dinner for two and leftovers for lunch!)
- Place turkey, red onion, bell pepper and garlic in a large deep skillet, and cook over medium high heat until fully cooked. Stir frequently to keep meat crumbled. (approximately 10 minutes.)
- Add taco seasoning and cook for an additional minute or two until well mixed.
- Serve turkey mixture over mixed greens. I love to have it with some sliced avocado and a little salsa. Mike suggested an Ezekiel wrap, so it would be more like a taco. (we also had steamed green beans and oven baked sweet potatoes that night for our extra veggies and starch. Next time, I'll have some wraps on hand.) We'll definitely be making this again!
